🍠 Ingredients

2 medium-large baked russet or sweet potatoes

1 can black beans, rinsed and drained

1 bell pepper, sliced

1/2 onion, sliced

Juice of 1/2–1 lime (for the sauté!)

1 avocado (for guac or slices)

Fresh tomato + onion for salsa

1/2–1 tsp salt

1/2 cup water (adjust for creaminess)
👉 Blend until smooth in a high-speed blender. Add more water or lemon to taste.
Optional: dash of garlic or onion powder for flavor.

Salsa:

In a pan, sauté bell peppers and onions in a splash of water or veggie broth until soft.
