🌮🍠 Mexican-Stuffed Sweet Potatoes

 

🍠 Ingredients

Main Dish

  • 2 medium-large baked russet or sweet potatoes

  • 1 can black beans, rinsed and drained

  • 1 bell pepper, sliced

  • 1/2 onion, sliced

  • Juice of 1/2–1 lime (for the sauté!)

  • 1 avocado (for guac or slices)

  • Fresh tomato + onion for salsa

  • Optional toppings: 🌿 cilantro, 🌶️ chili flakes, 🌻 pumpkin seeds


🌮 Debbie’s Homemade Taco Spice Mix

(Make a batch and store it in a jar!)

  • 3 tbsp chili powder

  • 2 tbsp cumin

  • 1 tbsp onion powder

  • 2 tbsp garlic powder

  • 2 tbsp coriander

  • 1 tbsp paprika

Optional jazz-it-up ideas:
🔥 Add cayenne or chili flakes for heat
🟠 Add smoked paprika for a smoky kick
🧄 Add a pinch of cinnamon for warmth
🧂 Add salt if desired—or keep salt-free!


🥣 Creamy Plant-Based Sour Cream

(Cashew or Sunflower Seed Option—choose your fave!)

  • 1 cup raw cashews or sunflower seeds (soaked or boiled until soft)

  • 4–5 tbsp lemon juice

  • 2 tsp apple cider vinegar

  • 1/2–1 tsp salt

  • 1/2 cup water (adjust for creaminess)

👉 Blend until smooth in a high-speed blender. Add more water or lemon to taste.
Optional: dash of garlic or onion powder for flavor.
💡 Freeze leftovers in ice cube trays for easy single servings later (testing this hack this week!)


🍅 Quick Salsa & Guac

Salsa:

  • Diced fresh tomato

  • Chopped onion

  • Lime juice

  • Optional: cilantro, chili flakes

Guac:

  • Mash ripe avocado with a few spoonfuls of salsa

  • Optional: lime juice or a pinch of cumin


🧑‍🍳 Instructions

  1. In a pan, sauté bell peppers and onions in a splash of water or veggie broth until soft.

  2. Add black beans, 1–2 tsp taco seasoning, and a squeeze of lime juice. Cook until warm and well mixed.

  3. Slice open the baked sweet potatoes and fluff the flesh with a fork.

  4. Spoon in the bean + veggie filling.

  5. Top with salsa, guac, and a generous drizzle of sour cream.

  6. Garnish with cilantro, lime, seeds, or chili flakes—your way!
