WHOLESOME CHOCOLATE BROWNIES
Wholesome Chocolate Brownies
Ingredients:
- 1 15 oz can salt-free black beans, drained and rinsed
- 1/2 cup cocoa powder
- 12 medjool dates, soaked for 15 minutes to soften (pits removed)
- 1 avocado
- 2 tablespoons plant-based milk
- 1 teaspoon apple cider vinegar (ACV)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup vegan chocolate chips or chunks
- 2 flax seed eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water)
- 1/2 cup walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x9 inch baking dish with parchment paper.
- In a food processor, combine the drained black beans, cocoa powder, soaked dates, avocado, plant-based milk, apple cider vinegar, baking powder, and baking soda. Blend until smooth and creamy.
- Add the vegan chocolate chips and walnuts to the batter in the food processor. Pulse a few times until the chocolate chips and walnuts are evenly distributed throughout the batter.
- Pour the batter into the prepared baking dish and spread it out evenly with a spatula.
- Bake in the preheated oven for 35 to 40 minutes, or until the brownies are set and a toothpick inserted into the center comes out clean.
- Remove the brownies from the oven and allow them to cool completely in the baking dish before slicing and serving.
