BROCCOLI CAESAR WRAPS

Broccoli Caesar Wraps

Ingredients:

Broccoli, steamed and cooled
Whole wheat tortillas (or gluten-free wraps)
Lettuce leaves
Red onion, thinly sliced
Sprouts (broccoli sprouts or sandwich blend)
Olive oil (for frying tofu)

Caesar Salad Dressing:

1 cup raw cashews, soaked overnight and drained
1/2 cup water
1/2 cup apple cider vinegar
1/4 cup fresh lemon juice
3 tbsp tahini
6-8 cloves garlic
1/2 tsp sage
2 tsp dulse (or 1 tsp gluten-free tamari)
1/4 tsp sea salt
1/2 cup olive oil

Tofu Slices:

1 block extra firm tofu, sliced into 2-inch x 1-inch x 1/2-inch pieces
Marinade: 1 part tamari, 1 part water, 1 tbsp garlic powder, 1 tbsp coriander
Coating: 1 cup corn starch, 1 cup nutritional yeast, 1 tbsp garlic powder, 1/2 tsp salt, 1/4 tsp pepper

Instructions:

Prepare Caesar Dressing: Blend all dressing ingredients in a high-speed blender until smooth. Store in the refrigerator for up to a week.
Marinate Tofu: Combine marinade ingredients and marinate tofu for 4 hours to overnight. Save marinade for future use.
Coat and Fry Tofu: Coat marinated tofu in the coating mixture and fry in olive oil until golden on both sides.
Assemble Wraps: Spread Caesar dressing on a tortilla, add tofu slices, lettuce, red onion, sprouts, and additional dressing. Wrap, cut in half, and enjoy!
Optional Caesar Salad: Toss romaine lettuce, red onion, and Caesar dressing for a side salad.
