Made with whole food ingredients and naturally sweetened, theyβre perfect for warm days, celebrations, or anytime you want a nourishing dessert that tastes indulgent but fuels your body.
Made in a mini cheesecake pan or a lined cupcake/muffin tin, theyβre freezer-friendly and portion-controlled, making them ideal for batch prep and sharing. The optional jammy middle layer uses fresh strawberries (great for those a little past their prime!) and adds a delightful burst of flavour between the creamy top and the nutty, chewy base.

Layer 1: Shortcake Crumble Base
Ingredients:
- 1 cup rolled oats
- Β½ cup raw almonds or walnuts
- 4 soft medjool dates, pitted
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions:
- Blend all ingredients in a food processor until a sticky crumble forms.
- Press about 1 tablespoon into each mini cheesecake mold or lined muffin/cupcake tin. Freeze while making the filling
Layer 2: Optional Jammy Middle (Highly Recommended!)
Ingredients:

1 cup fresh strawberries, chopped

1 tsp maple syrup (or 1 soft medjool date, soaked and mashed)

Instructions:

Mash or lightly blend the strawberries.

Stir in the maple syrup (or mashed date), chia seeds, and lemon juice.

Layer 3: Creamy Strawberry Top
Ingredients:
- 1 Β½ cups frozen strawberries
- 1 ripe banana
- Β½ cup soaked cashews (or hemp seeds or sunflower seeds for nut-free)
- 1β2 medjool dates (optional, for extra sweetness)
- 1 tsp vanilla extract
Instructions:
- Blend all ingredients until smooth and creamy.
- Spoon over the base (and optional jam layer), smooth the tops, and freeze for 4β6 hours or until solid.
