π₯ Dump-and-Simmer Minestrone
π₯ Dump-and-Simmer Minestrone
A deeply nourishing, no-fuss vegetable soup
β¨ Description
This is one of those back-pocket soups you can make anytime, with whatever you have on hand. Everything goes straight into the pot π«, the stove does the work π₯, and time gently brings the flavours together. Add macaroni if you want something more filling π, or keep it simple as a vegetable soup.

πΏ Nutrition Commentary
This soup is rich in fibre, potassium, and plant compounds that support digestion and hydration. Cabbage provides sulphur-containing nutrients that support the bodyβs natural detox pathways, while carrots add antioxidants and gentle sweetness π₯β¨.
The long simmer makes this soup easy to digest and especially supportive for the nervous system π§ π€. Adding pasta makes it more grounding and sustaining, while keeping it out creates a lighter, vegetable-forward soup. Either way, this is the kind of meal that warms you from the inside out π₯π₯£.
