STRAWBERRY BANANA SMOOTHIE BOWL

 Chewy Granola Recipe:

Indulge in the wholesome goodness of our homemade granola, packed with nutrient-rich ingredients. Here's what you'll need:

🌰 Ingredients:

  • 3/4 cup raw almonds
  • 3/4 cup raw walnuts
  • 1 1/4 cups rolled oats (try for gluten-free)
  • 1 cup dried fruit (cranberries, raisins, etc.)
  • 1/2 cup raw pepita seeds
  • 1/4 cup raw sunflower seeds
  • 1/3 cup shredded unsweetened coconut
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon pink Himalayan salt
  • 1 large apple (1 to 1 1/4 cups), diced
  • 1 banana
  • 3 dates (soaked in hot water for 15 minutes to soften)

🌈 Instructions:

  • Preheat the oven to 325°F and line a baking sheet with parchment paper.
  • In a food processor, pulse almonds and walnuts to a fine meal. Add oats and pulse to mix.
  • Add dried fruit and pulse to mix. Add pepita and sunflower seeds and pulse to mix. Add coconut and pulse to mix.
  • Transfer the mixture to a bowl.
  • In the food processor, blend apple, banana, spices, and 1/4 to 1/2 cup water to form a runny paste.
  • Add the paste back to the mixture in the bowl and pulse until it forms a ball.
  • Press the mixture onto the baking sheet (1/4 to 1/2 inch thickness) and bake for 50-60 minutes.
  • Let cool.  Break into chunks and store in an airtight container.

Variation:  If you want crunchy granola, swat out the apple, banana and dates for 1/2 cup coconut oil, heated to liquify.  Bake at 275°F for 40 minutes or until golden brown.

🍓 Ingredients:

  • 1/2 cup or a small handful of strawberries
  • 1/2 banana
  • 1 cup or a large handful of spinach
  • 1 tablespoon chia seeds
  • 1 tablespoon almond butter
  • 1 cup nut milk
  • 1 teaspoon vanilla extract

🌀 Instructions:

Add all ingredients to a blender and blend until smooth.
