YELLOW SPLIT PEA SOUP

Yellow Split Pea Soup

Ingredients:
1 onion, diced
1 ½ to 2 cups carrots, diced
1 ½ cups yellow split peas (soaked overnight, if desired)
2 tsp salt
1/2 tsp pepper
8 cups water or vegetable stock/broth
Instructions:
(Optional) Soak the yellow split peas in water overnight or for several hours. Rinse thoroughly before using.
In a large pot, heat some oil over medium heat. Add the diced onion and carrots, and sauté until they begin to soften, about 5 minutes.
Add the soaked (or unsoaked) yellow split peas to the pot, along with the salt, pepper, and water or vegetable stock/broth.
Bring the mixture to a boil, then reduce the heat to low and let the soup simmer, partially covered, for about 60 - 90 minutes, or until the split peas are tender and the soup has thickened to your desired consistency. Stir occasionally.
Once the soup is ready, taste and adjust seasoning if needed. Serve hot, garnished with fresh herbs if desired. Enjoy the nourishing goodness of this Yellow Split Pea Soup!
