SUPER BOWL BEAN CHILI & SOUR CREAM

Plant-based Bean Chili

Ingredients:
1 medium red onion, diced
5 cloves garlic, minced
1 bell pepper, diced
1 carrot, diced
1 can (15 oz or 398 mls) black beans (unsalted), drained and rinsed
1 can (15 oz or 398 mls) kidney beans (unsalted), drained and rinsed
1 can (28 oz or 796 mls) diced tomatoes (unsalted)
1 cup corn kernels (fresh or frozen, nonGMO organic preferred)
1 tablespoons chili powder
1 ½ teaspoon cumin
1 ½ teaspoon coriander
1 ½ teaspoon smoked paprika
1 teaspoon cacao powder
1/2 teaspoon cayenne pepper (optional, adjust to taste)
2 teaspoons salt (adjust to taste)
Pepper to taste
Instructions:
In a large pot, add a thin layer of water and heat over medium heat. Add diced onion, sauté until softened, adding more water to prevent burning as required. Once the onion is softening, add garlic and continue to sauté for a few minutes.
Add bell pepper and carrot. Cook for a few minutes until the vegetables start to soften.
Stir in the chili powder, cumin, smoked paprika, cacao powder, cayenne pepper, salt, and pepper. Once the spices start smelling fragrant add the diced tomatoes, stir in until liquid starts to boil. Stir in black beans and kidney beans and bring back to a boil. Stir in the corn. Once the liquid comes back to a boil, reduce heat to medium low, cover the pot and simmer. Let it cook for at least 30 minutes to allow the flavors to meld and the vegetables to become tender. Adjust seasoning to taste. If you prefer a thicker chili, you can let it simmer a bit longer.
Serve the vegan chili hot, garnished with your favorite toppings like avocado, cilantro, green onions, plant-based sour cream or vegan cheese.

All Purpose Cashew Sour Cream
This recipe can be the base for many, many other recipes! It's super versatile. You'll definitely be making it more than once!
Ingredients:
2 cups raw cashews, soaked overnight and drained
3/4 cup water
¼ cup lemon juice
1 tbsp apple cider vinegar
Instructions:
Blend all ingredients in a high speed blender until creamy and smooth, add more water if necessary. Be sure that it is smooth... if it's not super smooth, keep going :)
